It's for each screen, si you need to scroll to what you want to reset first - average fuel economy or average speed.
Trip computer is done separately through the little button bottom right of the dash. Same deal, press and hold.
Edit: Polishing wax is pretty easy, especially the pricier easy spread ones. Usual process is wash/shampoo, dry (you can use a chamois if you have issues with streaks), apply wax in an even thin coat, dry in the shade or somewhere cool, gently polish off the excess wax.
Cut and polish works well to hide scratches, the idea is knocking the sharp edges off the scratch so it's harder to see. I've not had luck with the chip stick things but lots of people swear by them.
