To my knowledge very little was changed 2010-2012, but I THINK 2013 saw the new Sensus infotainment system which means free satnav updates, can anyone confirm?

I don't think they are free. You still need to buy the CD or USB to update them.

Maps don't really worry me, very rarely use them. And will probably update to a double din screen with Apple car play

All the climate control and car settings are all heavily integrated into the factory screen system, it would be tough to straight replace I think.

Is there a factory double din that can go into the older models or are they all aftermarket?
Was there a factory model for the reverse camera and gps for the 2011 model along with the steering attachment? I'm thinking If I should go all OEM for the gps and reverse camera down the road

What you can fit depends on the infotainment level (5" vs 7" screen determines it for most models I believe). For later models they come with all the hardware, it's just a software update for GPS. Largely it comes down to if you have the antenna fitted (little shark fin in the roof towards the back) - if you don't have that then it really isn't feasible. Plus it's $350 a year for map updates (blame Telstra as they own WhereIs).
Given that any smartphone can do GPS now and will also be smarter with more up to date maps, better voice control, and better lane guidance I would stick with that. If the non-TFT dash displayed turn information inside the dials then I would be more inclined to recommend it. I have GPS fitted but I prefer my phone.
Regarding reversing camera, I don't think 2011 XC60s ever came with the most basic infotainment level, I believe the standard was "high power 8 speaker" to which you could add subwoofer or the full 12 speaker premium.
If that is the case you should have the 7" screen which means I believe the reversing camera might be as simple as cut, fit, plug, and program. Similar to the other modules I suspect it plugs into the CANBus that runs all over the car. I've read about UK people with similar vintage/model having it done for about $1000 and given how fiddly it would be I'm guessing more than half of that would be labour. You will need them to program it but you could save a chunk by fitting it yourself - the Volvo provided instructions are very easy to follow for all the bits I've looked at.
Short version: GPS probably not and not really worth it regardless, reversing camera likely yes but pricey if you pay the dealer to fit.

I'm going on a long trip with the kids and I'm after two tablets for playing movies and for the third row and tablet holders on the headrests?
Any ideas for something that won't break the bank?

Kids are good at holding a tablet if theres a movie playing. Pretty economical ;)

We use laptop (s) and 300w inverter with powerboard and keep devices and phones charged which is good for 5hr plus trips.
The centre seat down provides a place to rest a laptop - larger screen can be seen by 4 at a pinch.
More often each seat is occupant has their own device (typically 2 x laptops, an ipad and a couple of phones) hence a powerboard to keep up the juice.
We find a laptop is so much easier to load with movies use a portable drive or dvd. Wifi use can easily exceed 1gb per hr with a couple of avid HD youtube users ......

You can also get USB powerboards which run off of the cigarette lighter socket for less than the cost of a decent inverter if you wanted.
I've seen tablet holders that go over the headrests and seem to work well. Listening get to two different movies playing behind you could get old quick, though. Headphones also an option but you would need to make sure they didn't turn the volume up too far.
I don't think android vs apple matters much, you can get older versions of both pretty cheap. There are some pretty dodgy android tablet makers out there so be a little careful.
Another option is to get a laptop to sit up the front and hook it up to a cheap 19" TV or computer monitor sitting on the centre console with sound played through the car speakers via the Aux port. You could also try your luck with fleabay mini screens for the back of each headrest.
Sadly the over head fold down screens still seem very pricey as that would be a tidy way to do it.

Good thing about seat back holders is the security , stops them flying about somewhat and inevitable spillage of drinks , I just cannot believe how my two do it but so far we haven't had any fried electronics....

Even the oldest ipads (ipad1) do fine for playing mp4 files
The 32/64gb varients are cheap cause they dont get updates any more
My large prefrence is to anything without speakers so the kids have to use headphones
