Sounds like a cool project!

A smaller diameter master cylinder will give you more pressure with less effort (ideal if you're doing away with the booster) but you might run out of pedal travel depending on your brake piston area. Apparently 240s aren't the worst without a booster, but others who've done it would be best to give their opinion on pedal feel / quadricep strength requirements.
Perhaps a smaller diameter booster off a later model car?
Or even a hydraulic booster?

Generally people go with a larger master cylinder if they are running boosterless. Otherwise you are removing the mechanical assistance from the system and then having smaller piston to move the same amount of fluid.
