Yeh, you can use those bins - you might need to modify them though. Some will be setup to use different sensors, based upon region, etc, but it is pretty easy to turn such stuff off.
Why not start with the 607/608 binaries, as these are modified to provide good logging. You can then pull maps from anywhere (including making your own) to try different settings out. It is easy to replace a whole fuel/ignition/load map.
