Firstly, welcome.
Secondly, let's look at your shopping list. I'm presuming you're looking mostly at brand new parts and not second hand ones.
Sun visor clips x 2 - You'll want the 140 type or 240 wagon ones, 240 sedan ones are different - part number 1360894. Can be found on eBay for not a lot.
Grab handle end covers x 8 - If you want brand new ones, Voluparts in the US stock them, and they post to OZ. Note however that brand new covers are really white, and the grab handles themselves may have yellowed. https://store.voluparts.com/volvo-240-grab-handle-covers/
B Pillar covers (LH/RH) - Voluparts stock these. https://store.voluparts.com/volvo-240-blue-b-pillar-pair/
Centre console insert - I presume you mean the little box which sits in the centre console? If so, https://store.voluparts.com/volvo-240-tunnel-tray/
License plate light x 1 - part number 3540331 - different to the one on 240 sedans (edit: I was wrong before). Try a wrecker, or Berry's or VolDat (both in MEL) if you can't find a 240 locally in a wreckers. If they're physically undamaged, they don't tend to deteriorate. New ones available via The Usual Suspects.
Interior cover for trunk handle x 1 - I presume you mean this? https://store.voluparts.com/volvo-240-tailgate-handle-trim-blue/
bumper clips x 4 - There's a number of different types - more info needed.
Thirdly, the link below is to the 240 88+ parts manual PDF file from Genuine Classic Parts in Sweden. This comes in handy for looking up stuff, and also for seeing how various stuff fits together.

Finally, here are 'The Usual Suspects' for online ordering of the parts needed for repairing and restoring these cars. They are -
Skandix - https://www.skandix.de
FCP Euro - https://www.fcpeuro.com
CVI - https://www.cvi-automotive.se/
VP Autoparts - https://vp-autoparts.com
Genuine Classic Parts - www.gcp.se
These vendors often carry some bits which are the same, but prices will vary, so it pays to check out prices from each. Many of them carry bits which others don't. FCP carries a lot of 'service' type items. Rock Auto in the US is also a good supplier for generic parts, but you need to know exactly what you're looking for there. GCP doesn't carry the parts which are still available from dealers, i.e. service items like oil filters, etc, but often has NOS of interior trim and other parts which dealers don't carry.
Good to see another 240 being saved.
