Sorry to state what may be obvious to you, but - if the engine has overheated due to a head gasket failure, you're best off taking the head to a shop to get it placed in an oven to repair the warpage. Merely asking a shop to skim the gasket surface flat doesn't fix a warped head. Since the steel camshaft is unlikely to have warped when the alloy head overheated, it will mean the cam and its bearings will chew themselves out, and the HG will blow again before very long.

While you're in there, it's not a bad time to replace some hoses, like the ones on the IAC valve which have probably gone rock hard. Giving the IAC valve a good clean can't hurt either, since it's such a PITA to get to. Also, the air intake hose between the AMM and the throttle inlet is known to rub against the strut tower, so it's worth checking it for holes.
