They pop up now and again, some are pretty expensive for lots of work needed or are $20K>>> and nice but still not perfect.
To find a genuine 855R manual you are up against the fact that there were just over 80 manual wagons imported. (Take out the one I had that got wrecked...)
Even V70T5s are hard to find.
A good way is to make a non turbo one into what you want as they are less abused and more readily available.
Get a later RN motor and 6spd manual box from later cars to suit and get all parts you can new. Any R or T5 you find will need all new parts anyway.

Another good option nowadays is import from Japan , they are increasing in price too.

Getting hold of an 850R wagon is becoming more difficult, finding a good one is damn near impossible and even rough ones are beginning to demand a premium price.
A V70T5 is a very close substitute with lots carried over, and the same power output (whereas the 850T5 was a little detuned from the 850R).
I wouldn't consider a non-turbo car for a project base - at a bare minimum, you could consider an LPT car.
While, personally, I think that 850Rs have become overpriced for what you'll get for your money these days and while I'd really love a T5R, these are very overpriced now.
In my current case, I settled on a V70T5 as the basis for a project (I've had a few now) and will end up with a convincing UK/French spec FWD V70R by the time I'm done (with a few differences - wheels, suspension, brakes). I really didnt want an AWD car and Australia never got any FWD P80 V70Rs.

I ran an AWD V70R auto for a while and you do notice the extra drain on the driveline but I expect an RN engine swap, better turbo/tune/ supporting modifications (including 6spd manual) would be amazing to drive.
I DID like the behaviour of the rear independent alloy wishbone rear end on the AWD over the weird Deltalink on the FWD models.
The V70T auto I had was THE most fun I've had in any of my P80s including the first one , the 855R , I put a T5 auto controller computer in it for better shift quality and a manual boost controller pushing boost through a cheap eBay intercooler with larger diameter hoses and tubes , white injectors. Man did that think crank around town!
Deltalink and passive rear steer is pretty interesting actually and really good mid-corner - well worth a google!
IRS is also pretty good, despite limited aftermarket support in terms of suspension (admittedly easy enough to overcome) and the increased rear track is nice too (though you can fit C70 rear deltalink arms to increase rear track on your FWD 850/S70/V70).
While I admire the folks that put effort into AWD converting their 850/S70/C70 cars, due to the work involved and that they've ended up with something that 'could have' come from the factory - Rob's C70T5 AWD was awesome - sourcing decent AWD replacement parts is becoming more difficult and more modern AWD systems are leaps and bounds ahead of early Haldex.
From a driving point of view - its hard to argue with traction, but a FWD P80 on decent suspension rotates more happily than the AWD (likely due to weight) and, in my own opinion, is really fun to drive.

I agreee there is fun to be had with FWD but it gets VERY lame in the carpark of MSAC Swimming Centre in Albert Park Melbourne picking up the children from practice at shortest day of year in pitch black night and pissing cats , dogs and your mother-in-law , going nowhere fast with really good tyres.....Yeah , they were a race car not a family truck....
