Shannon's have a nice chunk each quarter from me.... I have the following with them:
2010 Holden VE Ute, SSV, V8 - limited use (once or twice a week)
1978 HJ45 Land Cruiser Ute - Occasional use (couple of times a week, but not every day)
2007 Yam WR250 - Occasional use
1992 Yam XT600 - Occassional use
Because we have enough stuff there to use every day (hell, there's another Land Cruiser (daily use) and a Honda Grom (daily) with NRMA!), it makes sense for the frequency of use that we have specified.
When we first got the HJ45 it spent a month on "Project" insurance - fully comp, but not on the road as it was laid up in the shed unregistered and a legitimate project, after it got on the road, it went onto full insurance, but in the future (November) will be going onto club rego.
Basically find a good person at Shannon's to deal with first up, make sure you get the message across that you fit their risk profile (you care about your car, you're enthusisastic about it, and active in the online communities) and that you know what your car is worth and they're easy to deal with. They're easier to get decent valuations out of when they have a few similar vehicles to compare to, so the utes in our case were good, the other Land Cruiser (which is with the NRMA) wasn't as good risk profile (probably due to the other owners...) and the motorbikes I last got someone who was a bike rider, so they bumped them all up by a good bit!
