Good question. I haven't looked at the 7/9 to know or think too much about how we'd be able to get some decent brakes on one.
The FC3S and FD3S RX7 4 spot caliper is very good. Its aluminium in construction (better heat dissipation than the cast iron 240 caliper), its overall bigger, the pads have a larger surface area and there are a lot of pad options.
The pistons in the caliper are quite close in size to the 240 caliper pistons meaning you dont have to worry about adjusting brake bias and they have a single brake line making them a lot easier to bleed.
Wreckers and/or ebay are a good source for 2nd hand calipers. Expect to pay $300 at the most for a pair.
Right now there are 4x FC3S pairs of front calipers and 1x FD3S pair on ebay.
With any brake component that you buy 2nd hand, its obviously best to check it thoroughly before use. Caliper kits are available (we sell them too) so I'd put a kit in a set regardless of how clean they are, etc.
